This soup is one of the high lines of my personal rating. But I love tomatoes! Love to cook it, especially when in the presence of seasonal the most delicious tomatoes…Today I have not one kind, but three kinds. It will be very tasty!
1-1,2 kg. of fresh tomatoes;
2 large sticks of celery;
2 cloves of garlic;
1 chili pepper;
a few sprigs Basil;
crackers for serving.
1. Prepare the vegetables: finely chop the onion, garlic, celery; tomatoes must be peeled. This can be done with a sharp knife or scoring the peel, pour the tomatoes with boiling water, so it is easy to depart.
2. To prepare the soup you will need a thick-walled pot or cauldron. Heat a couple tbsp oil onions and tormented on low heat until soft-brown colour.
3. Put the rest of the vegetables. Pour water (preferably hot), so everything was covered. Make a small fire and leave to simmer for 45 minutes. Cover the pan with a lid, but not tightly. Don’t forget to add salt!
4. After 45 mins tomato soup is ready. In principle, the degree of willingness is conditional: this soup can be eaten even raw. But! It was a long longing makes the taste of tomatoes special. Try different cooking options, maybe choose for yourself your ideal option.
